The story behind The Roadrunner Food Truck starts in Santa Fe, New Mexico, where food wasn’t just something we ate—it was how we connected as a family. Growing up, Chef Daniel spent countless hours in the kitchen alongside his mother, cooking with his brothers and sisters and learning the traditions that make New Mexican cuisine so unforgettable.
From handmade salsas to slow-seasoned meats and fresh ingredients, those early kitchen memories built a deep appreciation for bold flavors, authentic recipes, and the joy of sharing food with others.

Owner and Head Chef Daniel built The Roadrunner around one simple idea:
serve the kind of food he grew up loving.
Inspired by family recipes and years spent experimenting with traditional ingredients, Daniel combines authentic New Mexican cooking with the energy of Colorado’s food truck culture.
Every menu item reflects the flavors of his upbringing, the creativity of street food, and a dedication to serving dishes that people come back for again and again.
